Meanwhile, to bring them some cheer, I did surprise them with homemade chocolate hot cross buns as well as wholegrain carrot and oat rolls. It’s not the same as spending time together but it’s something at least 💛

The @emilehenryfrance potato/bread pot evidently is a great addition to any kitchen 🤗 Ingredients: - 245g bread flour - 175g spelt flour - 295ml water - ½ tsp instant yeast - 1 tsp salt - 2 tsp honey - 1 tbsp rice bran oil (or any vegetable oil with a high smoke point) Instructions: 1. Whisk together the dry ingredients. 2. Add water, oil and honey to the dry ingredients. Mix together either by hand or in a stand mixer until the ingredients come together to form a shaggy dough. 3. Rest for 30 mins. Fold the dough. Repeat twice. 4. Let the dough rise in a covered bowl in the fridge overnight or 12 hours. 5. Deflate the dough. Rest 15 mins. Shape into a boule. Place into 8" or 9" banneton/bowl seasoned with rice flour. Cover with a tea towel. Let rise until double in size about 1 to 1.5 hours. 6. 30 mins before bread dough is done rising, preheat oven at 230°C. Place bread pot/bread cloche/Dutch oven into the oven to preheat. 7. Turn out risen bread dough into the bread pot. Score with a sharp knife or lame. 8. Bake bread covered 35 mins, the 5-10 mins uncovered until crust turns into desired colour. When the bread reaches an internal temperature of 90°C or more, it is fully baked. 9. Let bread cool down for at least an hour before cutting into it. I know it’s difficult but it’ll be worth the wait!

I hated uprooting just as we had settled in somewhere. When my family bought this place, I thought this was it. This was finally a permanent home. Turns out, it isn’t. It’s time to move again but this time is different. I’m excited. Even though this is the home we most made our own, the only place we ever renovated, I look forward to what’s next. I’m excited that this time it’s my choice to move. Even though I admired bullet journals from afar fo Even though I admired bullet journals from afar for years, I was too intimidated to start my own. The creativity and artistry in the #bujo community is amazing 🤩 But I never thought I could live up to that. Recently however, I came across @elsarhae's Youtube video from early 2020 "Minimalist BULLET JOURNAL Guide // How to Begin a Bullet Journal" where she shared her set-up. I loved her approach to trackers, how easy it is to figure out correlations between sleep, mood, stress, health, etc over time. That's something I think would be very useful for me. That and simply taking pen to paper to reduce my phone screen time to slow down on the whole. So, I'm finally giving this thing a go, albeit with caution, telling myself not to get caught up in trying to make each page look perfect. What matters more is the function and the time I take to reflect. What encouraged you to try (bullet) journalling?
